Rice cake question

The rice cake recipe that is being passed around makes about 15 rice cakes. They don’t seem to keep to well in the fridge as they dry out and get super crumbly.

Just curious if people halve the recipe or give out the rice cakes to friends on the ride? Or do they eat them all on a ride?

I’ve also found that increasing the water:rice ratio helps them stick together more, as well as adding some kind of sticky binder like almond butter or maple syrup.
