I would like to shift my longer Sat/Sun rides to earlier in the week to avoid the crowded covids on the weekend. How would that work? I am just beginning week 2 SS part 1.

So just doing Saturday / Sunday as Tuesday and Wednesday and take Thursday off. Then Tuesday, Wednesday and Thursday on Friday, Saturday and Sunday. Ideally the Tuesday and Saturday workouts come after rest days. These are typically the more challenging workouts and important to be rested for them.
