I have used a local personal coach in the past. I have been riding consistently for the past 2.5 years. The region of the country we ride is basically for every 10 miles you climb 1,000ft. My weakness is on the climbs themselves and also grinding the rollers. I have considered the climbing intervals as my first plan but an curious the difference from the Sweet Spot training. What would you recommend?

Welcome @epc.jra - I think you can benefit from both. If you are training year round you can do sweet spot training 1st to build your ‘base’ and then switch to our hill climbing intervals to work on your power output.
In other words, ‘both’ will make you faster
